One of my favorite meals to cook is a burrito bowl! In college, It would be extremely hard to find time to cook and eat. I didn't "officially" start "meal-prepping" until my junior year of college. Realistically, I wouldn't have enough time to cook 3 meals daily. So what I began doing was dedicating Sunday to church, meal-prepping, and self-care. I would go grocery shopping at Kroger every Sunday and spend about $20-30 weekly (use y'all Kroger cards!!). I would prepare enough food for the days that I had class, work, and my internship. To begin, I would bring water in a pot to a boil (about 4 cups). I would add 4 pinches of salt and a teaspoon of olive oil. While this is boiling, I season the chicken with Italian Seasoning, Garlic Powder, a little Lemon Pepper, Cinnamon, Basil Leaves, and Cajun Seasoning. Cook until the chicken is brown on both sides. After I sauté the chicken, I drizzle a little honey on top. Once it cools down, I cut up the chicken into small pieces. When the water comes to a boil, I add about 2 cups of rice into the pot. While this is cooking, I chop up cilantro, tomatoes, a red pepper, and a mango. I also cut up a lime into pieces for each day that I am preparing a meal for. Make sure to keep an eye out for the rice! Stir your rice and season accordingly. I like to add cilantro and chopped onions into the rice when I see that the rice has cooked enough. I would cook the rice for about 30 minutes total or until it looks done. I also like to incorporate canned corn and kidney beans into the bowl. I drained both cans and cook them on the stove top, separately, until hot. Lastly, I like to eat my bowl with salsa verde, sour cream, avocado, and shredded cheese (all optional). I have tupperware designated for each day of the week. I put the rice, chicken, corn, and beans in a bigger tupperware. I add the chopped veggies + fruit into a separate tupperware. The lime, salsa, and sour cream all get put into their own, separate tupperware. This meal is so easy! It takes less than an hour, and is very filling. Ingredients:
It’s November! Which means Thanksgiving, falling leaves, prepping for Christmas, and also SOUP SZN! I absolutely love the Chicken + Gnocchi Soup at Olive Garden so I decided to recreate my own version! I hope you enjoy! First, I boil water on Medium High in a big pot. I wait until the water comes to a boil to put the chicken in. I then turn the heat setting down to Medium Low for the magic to happen. Wait until the chicken is completely white to drain. This usually takes 20-30 minutes depending on the amount of chicken you use. While the chicken is boiling, I cut up the vegetables I will be using. I chop up half of a Sweet Onion, shred a whole carrot stick, and chop up 2 whole celery sticks. In a pot, I put 3 tablespoons of butter and 5 tablespoons of oil (I prefer olive or vegetable oil) and put the heat setting at medium. I will stir the butter a little bit, periodically to melt it faster. Afterwards, I put the chopped up sweet onion, shredded carrots, chopped up celery, and 2 cups of spinach. I add a fourth of rosemary leaves. I season with my favorite seasonings (Italian seasoning, Creole Seasoning, Red Pepper flakes, garlic powder). I decrease the heat setting to medium low, and cover the pot with a lid. I let the vegetables cook for about 10 minutes before I add 3 tablespoons of minced garlic. I check on my chicken to see if it is ready. Once I see that the chicken is complete, I begin to hand shred the chicken with two forks. I then 3 tablespoons of flour to the vegetables and after about 10 minutes I add two cups of heavy whipping cream to the pot. I then add half of a cup of chicken broth into the pot. I also add half of a cup of half & half (I accidentally grabbed this from the store, and didn’t realize that it was half and half… I thought it was heavy whipping cream, but it ended up tasting good). I then boil water water in a separate pot on medium high. Once the water comes to a boil, I put the gnocchis in the pot (BE CAREFUL! IT’S DANGEROUS). You know the gnocchis are done once they begin to rise to the top. I then place the chicken and gnocchi in the pot. I then season accordingly (Adding salt and the previous seasonings). I usually eyeball and judge by taste for the amount of seasoning I prefer. Ingredients:
